Bryan’s Sweet Pastry

Ingredients

1lb 2  ozs Plain Flour
10 1/2 ozs Unsalted Butter
10 1/2 ozs Icing Sugar
9 ozs Ground Almonds
6 ozs Eggs (Shell on weight)
Pinch of Salt
Zest of 2 Lemons
Vanilla Essence

Method

Cream the Butter and half the Flour together

Combine the Eggs, Salt, Vanilla and Lemon Zest

Add to the Creamed Flour and Butter

Add the remaining Flour and the Ground Almonds
to the Mixture to form a Smooth Paste.

Chill for at least 15 minutes before use.

Roll pastry out in small amounts, cut, and use as required
