This light, delicate soup can be served hot or cold to 6+ people.
3 pints clear homemade chicken stock. 2 pints strained, freshly squeezed orange juice
2 whole cloves Flat leaf Parsley
Garnish: orange segments,with all white membrane removed, sliced thinly
Combine clarified stock, orange juice, and cloves in a saucepan.
Cover and bring to a simmer over very low heat. Simmer for 2-3 minutes. Strain into soup bowls and garnish with orange slices and Parsley.
Can be served chilled during those far off long, hot summer days.
