A cold, fruity, and bracing Summer soup to serve 4-6 people.
1 large cantaloupe, peeled, seeded, and chopped 3 yellow peppers, cored, deseeded, and chopped
1 natural yoghurt 1/2 glass dry white wine 1/2 sliced red onion 1 Tablespoon chopped coriander, 1 and 1/2 Tablespoons fresh lime juice salt to taste
Garnish: coriander sprigs
Puree the cantaloupe, peppers, wine, onion, yoghurt and chopped coriander. Stir in the lime juice, season with salt.
Refrigerate until well chilled.
When ready to serve, ladle soup into bowls. Top each with a sprig of coriander.
(You can stir the Yoghurt in by hand to prevent it from splitting.)
