Vegetable Stock: Place all stock ingredients in pan with 1 1/2 liters cold water.
Bring to the boil and simmer for 5 to 10 minutes only. Strain.
Soup: (1)
Sweat the onion in melted butter until soft but not coloured, add the celeriac, cover with the stock and simmer for 15 to 20 minutes until the Celeriac is soft.
(2) Add the chopped pears, bring back to the boil until the pears are soft.
(3) Blend in food processor adding Stilton to taste.
(4) Season to taste adding a touch of cream if desired., and serve.
