Asian Sweet Potato Soup

Ingredients

Method

20g  Butter
1Large Onion finely chopped
500g Sweet Potato peeled and diced
700ml Vegetable Stock
1/2 Tspoon Ground Coriander
28g Fresh Chilli
1/2  Tspoon Ground Cumin
28g Lemon Grass finely chopped
28g Fresh Ginger finely chopped
1/2 Tspoon Curry Powder
28g Lime leaves
150ml Coconut Milk
 

(1)  Melt the butter and cook the onion gently until soft but not coloured in a covered saucepan.

(2)  Add the roughly chopped sweet potatoes, chilli, cumin, curry powder,lemon grass, lime leaves and veg stock.

(3)  Cove, bring to the boil and simmer for           approx 30 - 40 minutes until the potatoes are completely soft.

(4)    Puree everything in a liquidiser or blender adding the coconut milk. Season to taste. Do not re-boil.    

To garnish add some diced cooked sweet           potato and lots of fresh coriander.
