(1) Melt the butter and cook the onion gently until soft but not coloured in a covered saucepan.
(2) Add the roughly chopped sweet potatoes, chilli, cumin, curry powder,lemon grass, lime leaves and veg stock.
(3) Cove, bring to the boil and simmer for approx 30 - 40 minutes until the potatoes are completely soft.
(4) Puree everything in a liquidiser or blender adding the coconut milk. Season to taste. Do not re-boil.
To garnish add some diced cooked sweet potato and lots of fresh coriander.
